Bruschetta Grilled Chicken Zoodle Bowls

Hello everyone!

Here is another recipe that I found on Pinterest I’d like to share with you. This recipe is easy to make and good for a light dinner or lunch.

Unfortunately, since it’s winter, I couldn’t grill the chicken on the BBQ which would have made it much better. I’ve cut it into cubes and cooked it in a pan on the stove instead. I also doubled the recipe to have leftovers for lunch the next day and found there was way too much of the bruschetta.Maybe I did something wrong, but it was still a good recipe. Something I want to try is adding feta cheese to either replace the parmesan cheese or adding to it and maybe a balsamic reduction over top. I feel it may taste even better. Yum! I will do this one again for sure!

Ingredients (Serves 2)

Marinade for the chicken

  • 3 tbsp olive oil (divided)
  • 2 tbsp balsamic vinegar
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 3 cloves garlic (crushed)
  • 2 tbsp fresh basil (chopped)
  • 2 chicken breasts

2 cups tomato basil bruschetta

    • 3 Roma tomatoes (chopped)
    • ¼ cup red onion (chopped)
    • 2 cloves garlic (minced)
    • 1 tbsp fresh basil (chopped)
    • 2 tbsp extra virgin olive oil
    • 1 tbsp balsamic vinegar
    • ¼ tsp salt
    • ¼ tsp black pepper
    • 2 tbsp parmesan cheese (grated)


  • 2 large zucchinis (spiralized into app. 4 cups zoodles)
